Instead of searing vegetables or meat the steamer cooks them gently. The food doesn’t sit in the water, but is cooked by the rising steam. Nothing burns and precious vitamins and minerals aren’t lost. An additional advantage of this way of cooking is that no fat or oil is needed with the steamer.
