The Santoku style — which translates roughly to “three uses” in Japanese — lets you efficiently chop vegetables, mince herbs and slice fish or meat in one elegant tool.
What sets this knife apart is its fluted (hollow-edge) blade. The evenly spaced vertical indentations create micro-air pockets between the blade and the food being cut, significantly reducing drag and preventing slices of moist or starchy items (like potatoes or cucumbers) from sticking to the blade.
