The Kai Shun Combination Whetstone is a great value entry-level whetstone for any quality, straight-edged knives you own. One side has a coarse grit (400) for removing small nicks and sharpening blunt knives. The other side has a fine grit (1000) for honing and for normal edge maintenance. Submerge the whetstone in water for 10-15 minutes. When you no longer see air bubbles floating to the top of the water, the stone is ready to use.
