This cutting board is crafted from hinoki wood, which has been used in Japan as construction material for centuries, revered for its light weight and anti-bacterial properties. It’s these properties that make it excellent for food prep as well, and it has the bonus feature of being gentle on your knives, particularly Japanese knives. Since the wood resists deep knife scars, your knives will stay sharper for longer. To avoid stains, Kai recommends slightly dampening the board with water before use.

Care
- Wet cutting board before each use to help resist staining
- Wash with mild detergent; towel dry, then let air-dry away from direct sunlight
- Clean stains by rubbing a cut lemon across the stain
- Both sides of the cutting board can be used; if you notice the board curving simply turn it over and use the other side until the board re-flattens, repeat as needed
