Use
The knife sharpener has two phases, a coarse diamond-coated sharpener and a fine ceramic sharpener. Use the coarse phase when you use this sharpener for the first time to sharpen a knife. This way you restore the fold and ensure that the knife has a sharpening angle of 17 degrees per side.
The second sharpening phase, the ceramic one, is used to refine the edge. You also lightly slide your knife through it a few times to keep track of it in between. This is the way to postpone the coarse sharpening phase.
