PEtec, or Precision Edge Technology, is a proprietary manufacturing process developed by Wusthof to ensure every knife leaves the factory with an exceptionally sharp and durable edge. Before the PEtec process was introduced, blades were manually measured and ground. Now, Wusthof uses robotic lasers to measure each individual blade before
it is sharpened. This laser measurement allows a computer to calculate the precise sharpening angle required for that specific piece of steel, accounting for even the slightest variations. Robots then grind the blade on whetstones with surgical precision before a final polishing stage. The result is a consistent 14-degree angle on each side (or 28 degrees total), which is significantly sharper than traditional European edges. This high-tech approach ensures that the edge is uniform from the heel to the tip, providing better initial sharpness and much longer edge retention.
